Chef Rochelle’s Banana Bread

If you have ever dined for breakfast or lunch in our Woods Restaurant you may have wondered who is working behind the scenes to deliver some of the delicious meals and sweets that we have on offer.

We thought it about time we introduce you to our talented larder chef Rochelle. Rochelle has been with the Melbourne Parkview Hotel for over 17 years now, working hard in our kitchen to deliver tasty treats and meals for our function and restaurant guests.

For those who have eaten breakfast in our Woods Restaurant, you would have experienced the deliciousness of what is Rochelle’s banana bread! This special recipe was given to Rochelle by Sister Jacinta, a nun who worked with Rochelle back when Rochelle was a 20 year old apprentice at East Melbourne Mercy Private Hospital.

Ingredients

  • 2 cups self-raising flour
  • Pinch of salt
  • 125g butter
  • 125g brown sugar
  • 2 eggs beaten
  • 500g mashed overripe bananas

Method

  • Preheat oven to 180ºC
  • Lightly grease or line a loaf tin
  • In a large bowl, sift together flour and salt
  • In a separate bowl, cream together butter and brown sugar
  • Stir in eggs and mashed bananas until well blended
  • Add banana mixture to flour mixture and stir until just combined
  • Pour mix into loaf tin and bake for 60 to 65 minutes until a toothpick inserted into centre of the loaf comes out clean
  • Let bread cool in pan for 10 minutes then turn out on to a wire rack

Then simply cut, serve, eat and enjoy!
